We are having a snow day over here at my house, which means it’s the perfect day to whip up a batch of this Creamy Crockpot Chicken Chili Recipe!
This Creamy Crockpot Chicken Chili Recipe is such a great cold-weather soup recipe to make in your slow cooker! Your family with LOVE this recipe – even the kids! Plus, here are even more Crockpot Recipes to try this winter!
Creamy Crockpot Chicken Chili Recipe
INGREDIENTS:
2 Frozen Chicken Breasts (Approx 1 1/2 lbs.)
1 Can of Rotel Tomatoes
1 Can of Corn
1 Can of Kidney Beans (Drained and rinsed)
1 Cup Chicken Broth
1 tsp. Cumin
1 tsp. Onion Powder
1 tsp. Black Pepper
1/2 tsp. Garlic Powder
1 Tablespoon Chili Powder
1 Package of Ranch Dressing Mix
1 8 oz. Package of Cream Cheese
DIRECTIONS:
Place chicken in the bottom of the Crockpot
Top with Rotel, Corn, Beans, Spices, Ranch Dressing, and Chicken Broth
Cover and cook on High for 3 1/2 Hours or Low for around 6 hours
Remove the chicken from the crockpot and shred or chop
Add Chicken back to the slow cooker and stir well
Add in Cream Cheese and stir
Cover and cook another 30 minutes or until Cream Cheese is completely melted and mixed in.
Serve with Chips, Cheese, Sour Cream, Salsa, and any other toppings you would like.

I normally drain the corn but not the rotel
