This fall is already turning out to be a busy time of the year! We have been running from Preschool to Dance to Soccer and back home for a late dinner so I am always looking out for new ideas to make dinners simple.
Here’s one of my favorite new recipes for Crock Pot Chicken Tacos. I love just about anything I can throw in my Crock Pot early in the day and have ready to go that night.
Now, I was worried the Salsa would make this too spicy for my kids but once you drain off the juice the chicken has a great flavor and it’s really mild, not spicy at all. We top this with Black Beans, Cheese, Lettuce, Salsa, & Sour Cream but you can choose your favorite toppings! I love that all I have to do is pull the toppings out of the fridge when we get home on a busy night and dinner is ready to go!

Crock Pot Chicken Tacos Recipe
Ingredients
- 1 Lb. Frozen Chicken Breast
- 1 Package Taco Seasoning
- 1 Can Rotel
Instructions
- Combine All Ingredients in a Crock Pot and Cook for 4 hours
- Drain Chicken and Shred with a Fork
- Fill Warm Tortillas with Chicken, Lettuce Tomato, Cheese or your Favorite Toppings!

I just learned a cool trick. Instead of shredding it with a fork, just throw it all in your mixer and in just a few seconds, it’s all shredded for you. I’m so excited about this, I just had to share.
