This Easy Spicy Jambalaya Recipe is perfect for any occasion or a simple Dinner Recipe. I love having new go-to recipes to pull out when you are wanting to try something a little different than your normal everyday meal ideas. Jambalaya is a great option if you love a rice dish with a lot of flavor! Plus, here are even more Easy Dinner Recipes!
Easy Spicy Jambalaya Recipe
INGREDIENTS:
1 TBS olive oil
8 ounces spicy andouille sausage, cut into thick slices
5 celery stalks, chopped
1 medium onion, chopped
1 large green bell pepper, chopped (can use any color)
3 garlic cloves, minced
1 cup brown rice
1 1⁄2 cups chicken stock
1⁄2 cup water
1⁄2 tsp red pepper flakes
1⁄8 tsp salt
10 fresh thyme sprigs
14.5 ounce can fire roasted diced tomatoes
1 cup shredded rotisserie (cooked) chicken breast, or other cooked chicken breast
DIRECTIONS:
In a large stock pot, add olive oil and heat over medium heat.
Add the sausage and brown for 2 minutes, stirring occasionally.
Add celery, onion, pepper, and garlic; saute for 4-5 minutes or until onions are translucent.
Add rice, chicken stock, water, red pepper flakes, salt, thyme, and tomatoes; stir.
Bring to a boil, then reduce heat, cover, and simmer for 30 minutes.
Remove thyme sprigs from mixture (careful, it’s hot!).
Add cooked shredded chicken; stir to combine.
Spoon into bowls and serve immediately with extra thyme leaves sprinkled on top as garnish.

*note – for a less spicy jambalaya, reduce red pepper flakes to taste- 1⁄4 tsp should be a mild spice.
