Chicken Fried Rice is a family favorite and easy to make. It’s the perfect recipe to use with leftover grilled chicken! A few weeks ago I posted one of my Favorite Stir Fry Recipes and I often make an extra cup of Uncooked Rice at the same time so I can whip up this quick and easy Chicken Fried Rice for lunch or dinner.

- Break Eggs into Empty Space in the Center of the Rice
- Stir Slowly until eggs are fully cooked and completely mixed into the rice
- Slowly add in Soy Sauce and continue to Stir
- Serve Immediately
Notes
I like to precook my rice or double a previous recipe and then hold back the rice for this recipe to save time. Also, using the leftover chicken for this saves time so you don't have to cook the chicken before making this.

I just made this recipe and I have to say I may never have to go to another Chinese place again for fried rice. I never realized how easy it is. I bought a rotisserie chicken so it was even easier. I left out the carrot and green peppers and added diced onion. I left out the onion powder too since I added diced onion. I wasn’t sure if that would overpower the taste. Looking forward to making it again and again. Next time I may try shrimp and chunks of pineapple. I like shrimp and hubby likes pineapple.
We love chicken fried Rice……the other day they wanted it but I had no chicken so I substituted in some cut up hot dogs, biggest hit in a long time
