How to Make Garlic Parmesan Smashed Sweet Potatoes
These are SO easy to make! You only need a few common ingredients!
Ingredients for Garlic Parmesan Smashed Sweet Potatoes
- Sweet potatoes
- Olive oil cooking spray
- Butter, Melted
- Minced garlic
- Parsley, fresh and chopped
- Salt and Black Pepper
- Parmesan Cheese, grated
Instructions for Garlic Parmesan Smashed Sweet Potatoes
First, Preheat the oven to 350 degrees. Trim the ends off of each sweet potato and cut into slices 1 1/2″ thick. Spray a large baking sheet with olive oil cooking spay. Arrange sweet potatoes on the sheet and bake for 25 minutes or until they are fork tender. Let them cool for 10 minutes.
Press gently with a fork to lightly flatten and smash. Be sure to not mash completely flat.
Mix together the butter, garlic and chopped parsley. Spoon a small amount of the mixture over each sweet potato. Sprinkle the tops of the sweet potatoes with salt and pepper.
Broil until the sweet potatoes turn slightly crispy, about 11 minutes. Remove from oven, Sprinkle the parmesan cheese over the smashed sweet potatoes, and return to the oven until the cheese is melted, about 2 minutes. Let stand for 5 minutes to cool slightly and serve.

- 3 tablespoons melted butter
- 4 cloves garlic, crushed
- 1 tablespoon parsley, fresh and chopped
- Kosher Salt and Black Pepper to taste
- 2 tablespoons Parmesan Cheese, grated
