Loaded Baked Potato Salad Recipe
Ingredients
- 4 pounds of potatoes
- 1 pound bacon, cooked crispy and chopped
- ½ cup of chopped green onions
- 2 ½ cups of shredded cheddar cheese
- 2 cups of regular sour cream
- Salt and pepper to taste
- 6 eggs, hardboiled, peeled, and chopped.
Instructions
- Cook your whole, peeled potatoes in boiling water until soft.
- Remove potatoes from heat and allow to cool.
- Chop the potatoes into small chunks ideal for potato salad.
- Transfer the potatoes to a large bowl and add the remainder of your ingredients one at a time.
- Continue to stir gently until all of the ingredients are mixed well.
- Chill the potato salad for at least 2 hours before serving to your guests.
- Add your salt and pepper to taste just before serving.

This was WONDERFUL!!! I made this yesterday. I mixed all of the ingredients except the potatoes together and put it all in the fridge. I mixed about an hour prior to serving and the potatoes still absorbed most of the sour cream. But WOW this was still amazing. Next time I will have a little extra sour cream to stir in prior to serving to up the creaminess. There will be a next time for sure!!! I got several compliments on it too! Thank you for sharing!!!
