Pecans are readily available around Christmas due to being harvested in the autumn months. If you’re looking for a Christmas treat to share this season, let me suggest making pralines. Pralines are made by combining caramelized sugar and pecans and they are oh so simple to make. I enjoy making these not only because they are a delicious tried and true crowd-pleaser, but also because they take very little time to whip together. You can always put your Pecan Pralines in a cute little Holiday Box for gift giving.
Pecan Pralines Recipe
INGREDIENTS:
1 cup sugar
1 cup brown sugar
½ cup milk
½ sweetened condensed milk
¼ teaspoon vanilla
¼ cup salted butter
¼ teaspoon salt
3 cups pecan halves
DIRECTIONS:
Begin by breaking the pecan halves into smaller pieces. An easy way to lay them out and break them up with the end of a rolling pin. I typically like to do this until I have a mix of broken pieces and whole pieces. Next, combine all the ingredients (minus the pecans) in a large saucepan. Heat slowly on medium to low heat until the mixture begins to boil. Stir frequently and watch that it doesn’t burn. At this point, the sugar should be completely dissolved and the mixture should have a smooth consistency. Add in the pecans and stir for another 2 to 3 minutes. Spoon the mixture on a lined baking sheet in individual-sized pieces. Refrigerating to allow the pralines to harden.
