Mashed potatoes is something I am always making way too much of. Trying to figure out how many potatoes to use for the amount of people you need to feed is what is tough. It’s not like you are making a baked potato and it’s one per person.
Anyway, I’m always looking for ways to use those leftover mashed potatoes in a new recipe so they do not go to waste. Here are a few of my favorite recipes using leftover mashed potatoes.
Mashed Potato Pancakes – A great substitute for hashbrowns at breakfast. And very easy to make.
Shepard’s Pie – There are many recipes available for Shepard’s Pie. It basically is a dish where you can throw in various items, top with mashed potatoes, and bake. Easy to make and a great way to use up those leftover spuds.
Just add Cheese You can create a new side dish but just topping the mashed potatoes with some shredded cheese and baking.
Mashed Potato Meatloaf – A great meal to make and use up any leftover mashed potatoes you have.
Once you start making some of these recipes you will begin to see all kinds of ways you can use them. So the next time you have mashed potatoes, don’t worry you are making too many. Just plan ahead and use them for your next great meal!
