What are your nonnegotiable for dinner recipes? I mean the things that a recipe should have if you are going to cook it for dinner? For me a recipe should be easy to make (the easier the better), use as little ingredients as possible (or at least not a crazy number of things and not difficult to find), and it should be incredibly tasty. This is one of those cases where the more flavorful it is, the better.
Actually, I’ve just realized that all my friends want the same things out of their dinners, they want simplicity, easiness and that delicious factor and if you are on the same bandwagon as we are then this recipe is going to become a favorite.
The reason? Well, this rustic roast chicken checks all the boxes and more because it’s not only delicious but a total crowd favorite as well and it’s not only easy to make, it’s super easy!
Another thing I really love is that the roasted chicken ends up super juicy and tender which was something that I struggled with before (seriously, why is making sure that chicken is fully cooked and juicy at the same time so hard?) but since we are cooking it with cream and stock, it comes out extra juicy!
Add a couple of garlic cloves to the pan while cooking it so the flavors get evenly spread across both the sauce and the chicken. And once it’s ready, serve it with a good garden salad. When a chicken recipe is this good you don’t need a stellar side dish, so stick with something simple and easy and the chicken will shine.
Rustic Roasted Chicken
2 Chicken thighs
1 Tbsp balsamic vinegar
1 Tsp dried thyme
3 Garlic cloves
2 Tbsps melted butter
½ Onion, minced
1 Cup chicken stock
¼ Heavy cream
1 Tsp Worcestershire Sauce
1 Tsp rosemary leaves
Salt and pepper to taste
Preheat oven to 400F.
In a cooking bag, season the chicken with the balsamic vinegar, thyme, salt, and pepper. Refrigerate for 2 hours.
Remove from the fridge and let it set at room temperature.
In a saucepan over medium heat cook the butter, onion, and garlic for 3 minutes or until fragrant.
Incorporate the chicken stock, cream, Worcestershire sauce, rosemary, salt, and pepper.
Stir well. Cook for another 8 minutes or until it thickens.
Place the chicken in an iron dish, pour the sauce over, and transfer to the oven for 30 – 40 minutes or until golden.
Remove from the oven.
Serve and enjoy.
