Slow Cooker Chicken Queso Soup is the new favorite soup in our home currently. You have shredded and juicy chicken, in a creamy and cheesy based soup, with a nice hit of spice from the salsa. Top with your favorite condiments and you have a crowd-worthy soup. This is a keto soup recipe, that you can add to your meal plan!

Can I Use Neufchâtel Cheese In Replace of Full Fat Cream Cheese
Neufchâtel Cheese is a lower fat cream cheese (⅓). Now many reach for this at the grocery store because they are following diets, looking for healthier alternatives and so on. While I have not personally used it in this recipe, I know Neufchâtel Cheese can be used in other soup recipes.
One thing to be aware of is it is harder to get it to melt smoothly like full-fat cream cheese. You might see it looking curdled or clumpy in the soup. While it will taste good it might look the prettiest serving it up. You will have to work hard to stir and try and get it melted and incorporated in soup.
Can I Adjust The Heat Of Chicken Queso Soup
You sure can! Reach for whatever heat range of salsa you generally prefer. You could use mild salsa to give it a more mellow flavor or reach for hot to really add some heat to your soup.
Changing out the salsa won’t affect the flavor or turnout.
Why Do You Add Cheese and Heavy Cream At End of Cook Time
One thing about the slow cooker is it cooks low and slow. Dairy products tend to curdle and separate over the cooking process. Adding in your heavy cream and cheeses at the end will get them melted and blended in your soup base but not leave them looking like a curdled disaster.

Ingredients For Slow Cooker Chicken Queso Soup
1 1/2 lbs. Boneless Skinless Chicken Breast
1 ½ Cups of Medium Hot Salsa
2 1/2 Cups of Chicken Broth
1 tsp. Salt
1 tsp. Black Pepper
½ tsp. Paprika
½ tsp. Cumin
½ tsp. Garlic Powder
1 8-oz. Package of Cream Cheese
1 8 oz. Package of Monterey Jack Block Cheese, Shredded
½ Cup. Heavy Cream
Directions For Slow Cooker Chicken Queso Soup
- Place your chicken breasts in a Large Slow Cooker
- Top with Salsa, Chicken Broth, Salt, Pepper, Paprika, Cumin, & Garlic Powder
- Cook 4-5 hours on High until Chicken is falling apart
- Remove Chicken from Soup and Shred with 2 forks
- Return Chicken to Soup, Add in Cream Cheese, Heavy Cream and ½ of Monterey Jack Cheese
- Cook another 30 minutes to 1 hour, stirring occasionally
- Serve Hot and Top with the Remaining Cheese!
You can also add in Avocado, Salsa, Cilantro and more!

You could probably get about 10 to 12 servings depending on the appetite of your crowd. Enjoy!
