Ingredients for Lemon Sugar Cookies
- 1 cup Butter, cold, cut into cubes
- 2 cups Sugar
- 1 Tablespoon Fresh Lemon Juice
- 2 Eggs
- 2 teaspoons Vanilla
- 1 Tablespoon Lemon Zest
- 3 cups Flour
- 1 1/2 teaspoons Baking Powder
- ¼ teaspoon Baking Soda
- ½ teaspoon Salt
How to Make Lemon Cookies
- Cream Butter, Sugar, Vanilla, then slowly add eggs and lemon juice and zest
- Combine Flour, Baking Powder, Baking Soda & Salt in a bowl
- Slowly add into Butter Mixture and mix well
- Roll dough into balls and place on a parchment lined baking sheet
- Bake for 10-12 minutes at 350 degrees
- Drizzle with Vanilla Icing Mixture

You want to store these cookies in an airtight container or even fridge. Just make sure that if you stack these cookies you put parchment paper in between the layers so that the cookies don’t stick together. You can keep your cookies for around 3-5 days before they dry out.

I made this recipe in the evening and put the dough in the frig overnight. Just baked a cookie sheet full and they all went flat. My first thought would have been , bad baking soda or baking powder, but I just made other cookies using both and they turned out fine. Can I salvage them by adding more flower and soda or powder? Help!

How many cookies does this recipe make?
You can’t cream ice cold butter with the sugar. It would take forever for the butter to incorporate. Wouldn’t it be better if it was at room temperature?
Does not tell me what to do with the baking soda??

My family LOVES this recipe! Everyone from the 18 month old boy to the 80 year old great grandparents adores these cookies! We’ve made them into big cookies, mini cookies, and bars sometimes with other times without icing. The bars are our favorite form- the texture is perfect! The taste is spot on with just enough lemon to satisfy a lemon craving, but not enough to make it tart or bitter! This is a 5 Star winner that we will be enjoying for years to come!
