Is it just me or does it seem like as my kids get older life just gets crazier! I’m pretty sure when I had 2 kids ages 3 and 1 people would look at me and tell me “It’s just a season” and while that was just a season (A very short season in hindsight) it was just the beginning of dance practices, car-line, homework, & tennis lessons, etc. The weeks fly by and if we’re not careful it’s easy to run through the drive through in between events rather than sitting down to a family meal.

This one features the new Barilla® Pronto™ Pasta which cooks in just 10 minutes (We’re talking from a cold skillet and cold water, to perfect pasta in 10 minutes). I’ve got a great new Spicy Chicken Pasta Dish to share with you today that you can make in under 20 minutes. Can you say #OnePanPronto?
You can pick up the Barilla Pronto at your local Kroger or Kroger Affiliate stores in the pasta aisle, and one of the things I love is that it’s similar in price to the other Barilla products so you don’t have to pay more for the added convenience.
One of my best Time Saving Tips is to pre-cook Chicken on the weekends, I like to bake or boil chicken breasts and then throw them in my Kitchenaid Mixer to shred them. Then I have chicken already cooked for quick and easy dinners, if you follow this one tip this recipe takes around 15 – 20 minutes to prepare, and you only need one pan so it’s super simple and clean up is a breeze.
Here’s the recipe for the Spicy Chicken Pasta, you have the option of using Parmesan Cheese which will give this more of an alfredo flavor, but I really love the zing of the colby jack cheese, it’s one of my kids favorite cheeses and it melts nicely in this dish.
Ingredients:
1 Box of Barilla® Pronto™ Pasta
3 Cups Cold Water
1 Red Bell Pepper Diced
1/4 Red Onion Diced
1 Cup Milk
4 oz. Cream Cheese
8 oz. of Parmesan or Colby Jack Cheese
2 tsp. Cajun Seasoning
2 Cups of Cooked and Shredded Chicken
1/2 tsp. Pepper
1/2 tsp. Garlic Powder
2 Tbsp. Butter
Directions:
Place the Butter in a Skillet and heat over medium high heat until melted
Add the Bell Pepper, Onion, Pepper & Garlic Powder and Saute over Medium Heat until the onion is transparent
Pour all of the Bell Pepper & Onions onto a Separate Plate for later and wipe out the Skillet
Place the Barilla® Pronto™ Pasta into the Skillet and cover with 3 Cups of Cold Water
Set the timer for 10 minutes and turn the burner on high
Stir noodles while cooking to keep them from sticking to the bottom of the pan
Once the water is absorbed into the pasta and the timer goes off add Cheese, Cream Cheese, Milk and Cajun Seasoning.
Stir until all the cheese is well mixed and melted
Add in Bell Pepper and Onion and the Chicken and Stir until well mixed
Serve immediately!
This recipe fed our family of 5 comfortably, I think you could get 6 servings out of this if you had some side dishes and other things with your meal, or you could feed 4 adults without any other sides needed!
