Variations To Recipe
So I used Greek yogurt, but honestly, you have so many options. Reach for flavored coconut Greek yogurt, regular yogurt, or even opt for whipped cream. You could even make this even sweeter by doing a cream cheese base if you want to make it more indulgent.
You can essentially add any of your favorite fruits to the top. I even added a few mint leaves for a nice minty flavoring. Go ahead and reach for fruit you and your family enjoy.
Want even more ideas on what you can add to your watermelon dessert pizza? Shredded coconut, slivered almonds, sunflower seeds, dust with sea salt to bring out the flavor of the fruit.
Can I Make This Dessert In Advance
I don’t recommend making your dessert pizza in advance. The reason being is the fruit will break down and release liquid. This will kind of meltdown in a sense. So I recommend making and serving up when you plan to eat it.
How to Pick Ripe Watermelon
Here are some tips and tricks for picking fresh and ripe watermelons at the grocery store or at the farmer’s market.
Yellow Spot – By the vine end, you will see a yellow spot on a watermelon. Normally you would think no I don’t like that, but it means it ripened in the field. This is a must for a watermelon to be sweet. Once picked watermelons stop ripening.
Weight – Reach for a heavy watermelon for its size. This means it is full of juice and will offer a sweeter flavor.
Now, these are not a guarantee but that is what I opt to reach for.
- Vanilla Greek yogurt
- Pomegranate seeds
- Fresh mint
- Slice watermelon into 1" circle. Spread yogurt in the center of the watermelon, leaving a little pink around the edges of the "crust".
- Make three cuts which will create six slices. (I have found it's easier to cut first and then add the fruit, so the fruit will remain pretty and whole!)
- Add strawberries first, then a cantaloupe, then blueberries, mint, and pomegranate seeds.
- Best enjoyed immediately- this dessert does not store well because the yogurt will 'melt' and mix with the watermelon juice.
You could add honey, coconut flakes, or drizzled chocolate if you prefer!
