In fact, I like to make them ahead of time on the weekend and freeze them. Then, they’re a quick option to grab and heat up on busy weekdays when everyone is trying to get out the door on time!

Ingredients for Breakfast Taquitos
- Corn Tortillas
- Cheese
- Breakfast Sausage
- Scrambled Eggs
- Salsa, for Dipping (Optional)
Preheat the oven to 425 degrees and warm tortillas on a hot, dry griddle or skillet so they are pliable and are easily able to be rolled up. Alternatively, you could microwave them for 10 seconds. After that, assemble all the ingredients. Place the tortillas on a full-size sheet pan. Divide the scrambled eggs among the tortillas. Sprinkle shredded cheese on the eggs. Place a sausage link on top. As you can see, the ingredients for Breakfast Taquitos are quite simple!!
Next, roll up each taquito and place it seam side down on a baking sheet lined with parchment paper.

Notes
You must not skip the step of warming up the corn tortillas before assembling your breakfast taquitos. If they are not warmed up enough, they will not be pliable enough to roll and will tear easily!
