Chicken Fajitas on the Grill Recipe
Fire up the barbecue and get ready for Summertime with this Chicken Fajitas on the Grill Recipe! Mmm! These will become a family favorite recipe that you will want to share with your friends and family! This is a great recipe for Memorial Day, Labor Day, or 4th of July! Chicken Fajitas on the Grill Recipe
INGREDIENTS:
1 large red bell pepper, cut into thin slices
1 large green bell pepper, cut into thin slices
1 large yellow onion, cut into thin slices
1 lb boneless, skinless chicken breasts (4 small breasts) 1 package taco seasoning
1 lime, cut in 4ths
nonstick spray
8-12 small flour tortillas
optional: sour cream, avocado, salsa for serving
DIRECTIONS:
Heat your grill over medium heat. Place a sheet of heavy duty aluminum foil on a table/counter. Spray the center with nonstick spray, Place 1/4th of the pepper slices and 1⁄4 of the onion slices in the center. Place your chicken breast on top of the vegetables. Liberally season chicken with taco seasoning. Squeeze 1⁄4 of the lime over the top.
Carefully fold up the 2 longest edges, bringing them together at the top. Fold over together, twice, but leaving room above the food inside. Gather the sides, and fold/scrunch those together to seal the packet, making sure it’s totally sealed, yet leaving room around the food for steam to circulate.
Repeat for remaining 3 packs.
Place on grill; cook 15-20 minutes, or until chicken is cooked through (chicken should be 165 degrees internally). Carefully open as steam will be coming out of the packet.
While chicken is cooking, place your tortillas on a piece of foil, and seal them up. Place on the grill the last 2 minutes of cooking the fajita packs – this will warm the tortillas perfectly. Serve with optional toppings; sour cream, avocado, salsa etc.
