Creamy Jalapeño Corn Dip Recipe
INGREDIENTS:
3 Cans of Whole Kernel Corn Drained and Rinsed
2 Large Jalapenos Seeded and diced small
1 small Yellow Onion Diced
1 Cup of Sour Cream
1 ½ Cups of Pepper Jack Cheese
¼ Cup Monterey Jack Cheese
1 ½ tsp. Salt
1 tsp. Black Pepper
8 Ounces of Cream Cheese, Diced
Parmesan Cheese & Green Onions for Topping
DIRECTIONS:
In a slow cooker combine Corn, Jalapenos, Onion, Sour Cream, Pepper Jack Cheese, Monterey Jack Cheese, Salt and Pepper.
Cover and cook on Low for 2-3 hours
Slowly stir in cream cheese and cover for an additional 15-30 minutes
Top with Parmesan Cheese, or Green Onions and Serve Warm!

How To Store Leftover Jalapeno Dip
You can place any leftovers you have in an airtight container for 3-5 days in the fridge. When stored at the right temperature this dip can last awhile. I always recommend using your best judgment in terms of if the dip has gone bad or not.
How to Tame The Heat Factor Down In Jalapenos
You can tame down the heat by seeding the jalapenos and removing the white flesh from the inside of the peppers. Rinse really well to remove all the excess oils. Then slice and use in the dip. The seeds and white fleshy part are where most of the heat is in the pepper.
By removing those you can adjust the heat, if you prefer a more mild-flavored dip.
Can I Use Fresh Corn Instead of Canned
Yes you can use fresh corn you cut off cobs or even frozen corn if you prefer. All corn will work in this recipe. Just make sure there is no extra juices, as it will affect the texture of the dip.
