This Loaded Baked Potato Casserole is a favorite side dish at our house! And, it’s a great way to to make loaded potatoes for a crowd, too! Usually we only have this around Thanksgiving or Christmas, but honestly, it would likewise go well with BBQ in the summertime. I’ve also included a way to speed up this recipe if you don’t have a long time to bake your potatoes. Scroll down for the tips!
How to Make Loaded Baked Potato Casserole
This recipe comes together so quickly and the ingredients are all easy to find!
Ingredients for Baked Potato Casserole
- Unpeeled baked potatoes, still warm
- Pepper
- Salt
- Sour cream
- Bacon, cooked and coarsely chopped
- Shredded mild cheddar cheese
- Shredded mozzarella cheese
- Green onions, chopped
Instructions for Loaded Baked Potato Casserole
Preheat oven to 350° F and spray baking spray in a casserole dish or a 9×13 baking dish.
Chop the warm baked potatoes into bite size pieces. Place half of the potatoes in the baking dish and sprinkle them with half of the salt and pepper.
Note: If you don’t have time to bake your potatoes in the oven, I have a tip for you! Instead of baking the potatoes, cut them up first while the potatoes are raw, put them in a microwave-safe mixing bowl, and cover it with plastic wrap. Poke a hole in the plastic wrap with a fork in a couple places to vent the potatoes. Then, microwave for 9 minutes or until the potatoes are soft. Cooking times will vary depending on your microwave and the mixing bowl you use.
Smear 1 cup of the sour cream on the potatoes and sprinkle on half of the shredded mozzarella and shredded mild cheddar cheese. Next, sprinkle on half of the bacon. This completes the first layer of the casserole.
Repeat these steps for the second layer and bake uncovered for 20 minutes or until the cheese is melty and the entire casserole is heated through. Sprinkle with the chopped green onions before serving.
