What if my store doesn’t carry canned pumpkin?
One year, there was a bit of a canned pumpkin and pumpkin pie filling shortage! I don’t think that will happen again, but I have been known to buy some ingredients on Amazon if I can’t find them in my store locally! It’s a lifesaver! Just in case you need it, here’s canned pumpkin you can buy online.
Can I substitute canned pumpkin pie filling?
Sometimes people get canned pumpkin and canned pumpkin pie filling confused because the labels look so similar. (Even I have accidentally grabbed the wrong can once while shopping at my local store!) However, for this recipe anyway, you cannot substitute pumpkin pie filling for plain canned pumpkin. There is a significant amount of spice flavoring in the cake mix, and adding the pie filling would be too much, in my opinion! It is best to stick to regular canned pumpkin for this recipe.
First, preheat the oven to 375 degrees and line a 9×13 baking pan with parchment paper. Combine melted butter, canned pumpkin, spice cake mix, and one egg in a medium mixing bowl. Mix just until combined with a whisk.
Add the chocolate chips. (You can add more or less than the recipe calls for depending on your taste!) We like LOTS of chocolate chips!
Next, mix in the chocolate chips with a spoon. Doesn’t that look yummy?
After that, spoon out the Pumpkin Chocolate Cookie Bar batter into the baking dish. I smoothed it with a spatula so it would bake evenly.
Lastly, bake for 20-25 minutes. My cookie bars took exactly 23 minutes to bake completely, but your baking time will depend on your oven, of course!

Pumpkin Chocolate Chip Cookie Bars
These Pumpkin Chocolate Chip Cookie bars are so flavorful and packed with pumpkin spice and chocolaty flavor! With only 5 ingredients, you can bake them in a jiffy!
Ingredients
- 1 box Spice Cake Mix
- 1 15 oz. can Pumpkin
- 1/2 cup Butter, melted
- 1 Egg
- 1 1/2 cups Semi Sweet Chocolate Chips
Instructions
- Preheat oven to 375 degrees and line a 9x13 baking pan with parchment paper or use baking spray on both the bottom and sides of pan.
- Next, pour cake mix into a large mixing bowl. Add pumpkin, melted butter, and egg and stir well until combined.
- Then, add chocolate chips and stir until completely combined.
- Fold into baking pan and bake for 20-25 minutes, or until bars are golden on the sides and cooked through in the middle.
- Cool for 30 minutes to one hour and use parchment paper to remove from pan.
- Cut the cookie bars and enjoy!
