What Cut Of Beef Do You Use For Beef and Broccoli
I used a beef chuck roast and thinly sliced it. But you have options if you are looking for a different cut of beef. Many use flank steak, but it can sometimes be a bit too tough for my liking. Flat iron steak or skirt steak are two other options. You can also grab another style of roast and thinly slice it.
One thing I do is my butcher at the grocery store will take a roast and slice it for you. So you can always ask after you pick your cut of meat what you want. They generally do it free of charge.
What Is The Sauce In Beef and Broccoli
I use soy sauce, beef broth, brown sugar, and garlic. This combination offers a slightly sweet and savory take to the beef and broccoli. Then once it has cooked for awhile you then use cornstarch to help thicken up the sauce.
Can I Use Fresh Broccoli In This Slow Cooker Beef Broccoli Recipe
Yes. You can use fresh or frozen broccoli for this recipe. I find both work great. Frozen will offer you a more tender texture. I find both taste amazing. If fresh just make sure to rinse and prep the stems of broccoli before tossing in.

Slow cooker beef and broccoli is an easy weeknight dinner recipe you can make with minimal prep. Broccoli beef is hearty, savory, and downright delicious!
Ingredients
- 1 1/2 lb Beef Chuck Roast, Sliced Thinly
- 14.5 oz Can of Low Sodium Beef Broth
- 1/2 Cup (4 oz) Low Sodium Soy Sauce
- 1/2 Cup Dark Brown Sugar
- 2 tsp Minced Garlic
- 2 Tbsp Cornstarch
- 2 - 12 oz Bags of Broccoli Florets
- 2 Cups of White or Brown Rice
Instructions
- In a small bowl combine Beef Broth, Brown Sugar, Soy Sauce and Garlic
Slice the Beef Chuck Roast into thin strips and place evenly over the bottom of the Slow Cooker - Pour sauce over the beef strips evenly and cook on low for 5 hours
- Remove approximately 1/3 Cup of Liquid from the slow cooker and whisk with the Cornstarch
- Add Liquid Corn Starch Mixture back into the Slow Cooker and mix well
- Add Frozen Broccoli on top of beef mixture and cook on Low another 1 hour or until Broccoli and Beef is Tender
- In a Separate Pan Cook 2 Cups of Rice and 4 Cups of Water according to package directions

TIP: I use my instant pot to cook rice, you only need about 2 1/2 cups of water for 2 cups of rice in an instant pot.

How To Store Leftovers
You can transfer any leftovers you have into an airtight container and store for up to three days in the fridge. Anything after that, I recommend using your best judgment. For reheating I heat up in a pan on the stove or in the microwave, both work great.
