Instructions for Cadbury Egg Chocolate Loaf Cake
Preheat the oven to 350°F . Grease a standard loaf pan and line the bottom and all sides with parchment paper. Combine the flour, cocoa powder, and baking powder in a large mixing bowl and stir with a whisk. Set aside.
Combine the eggs and sugar in a medium mixing bowl and stir with a whisk just until combined.
Add in the melted butter, milk and vanilla extract. Mix until combined.
Pour the wet ingredients into flour mixture and stir with a whisk. Once nearly combined, add the hot water and stir well until totally combined. Add chocolate chips and stir until combined.
Pour the mixture into the loaf pan and bake for 35-40 minutes, or until a toothpick comes out clean which is inserted in the center. Let the cake cool completely in the pan for one hour. Remove from pan and let cool another hour before frosting.
For the frosting:
Combine butter and vanilla in a large mixing bowl and mix on medium speed for 2 minutes. Add powdered sugar and mix on low until sugar is just combined. Then, mix on high until frosting is fluffy. Add milk as needed, depending on your preferred consistency.
Spoon into 2-3 bowls, depending on how many pastel colors of frosting you would like to have.
Pipe onto the top of the loaf and place chocolate eggs on top in rows, so the loaf cake can easily be sliced without cutting through the eggs. Sprinkle additional crushed Cadbury Eggs on top for extra texture, if desired.
What is a loaf cake?
Of course it goes without saying that a loaf cake is baked in a loaf pan. However, the ratio of flour, fat, and sugar is different than a regular cake, resulting in a much more dense texture. This allows the cake to easily be cut into thin slices and still hold its shape.
