Easter Brookies combine three decadent layers of chocolate chip cookies, classic Oreos, and gooey chocolate brownies for a flavor explosion in your mouth! This recipe is SO easy, because all you have to do is bake it all in a 9×13 pan and cut out the Easter egg shapes with a cookie cutter. I have a delicious recipe to make from scratch below, however if you want to cut your time and ingredients in half, you could actually make this with premade cookie dough and a brownie mix! How to Make Easter Brookies
Even though there are three layers in these Easter Brookies, the ingredients are all simple! (Especially the Oreo layer! Ha!)
Ingredients for Easter Brookies
COOKIE LAYER
- Salted butter, melted
- Granulated sugar
- Brown sugar, packed
- 1 Egg
- Vanilla
- Baking soda
- All-purpose flour
- Semi-sweet chocolate chips
OREO LAYER
- Just Oreos!
BROWNIE LAYER
- Unsweetened baking chocolate, coarsely chopped
- Salted butter
- Granulated sugar
- Eggs
- Vanilla
- Unsweetened cocoa powder
- All-purpose flour
Instructions for Easter Brookies
Preheat oven to 350°. Line a 9×13” pan with parchment paper.
Cookie Layer Instructions
Cream together the butter and sugars with a mixer on high in a medium mixing bowl. Mix in egg, vanilla, baking soda, and salt. Next, stir in flour, and then stir in chocolate chips. Lastly, press the cookie dough into the bottom of the prepared pan.
Oreo Layer Instructions
Place Oreos on top!
Brownie Layer
First, place the butter and the baking chocolate in a large, microwave safe bowl. After that, heat for 30 second intervals for 2 minutes or until chocolate is completely melted, stirring in between each time until the chocolate is smooth. Next, add the sugar and stir. Add eggs, vanilla, cocoa and stir well. Then, add the flour and stir well.
Spread brownie batter over the top of the Oreos in prepared pan.
Bake for 30-40 minutes until the top of the Easter Brookies looks done and the center is cooked through.
Let cool completely, for 1-2 hours. With a cookie cutter, cut out egg shapes. Add frosting (homemade or premade) and Easter sprinkles, if desired.

Easter Brookies
These decadent Easter brookies are three layers of delicious desserts combined into one! With chocolate chip cookies on the bottom, Oreos in the middle, and chewy brownies on top, it combines all your favorite desserts into one!
Ingredients
- COOKIE LAYER:
- ½ cup salted butter, melted
- ⅓ cup (57g) granulated sugar
- ½ cup (100g) light brown sugar packed
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 ½ cups all-purpose flour
- 1 ½ cups chocolate chips semi-sweet or milk
- OREO LAYER:
- 24 Oreos
- BROWNIE LAYER:
- 4 ounces unsweetened baking chocolate coarsely chopped
- ¾ cup salted butter
- 1 ¾ cups granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons unsweetened cocoa powder
- 1 cup all-purpose flour

- Let cool for 1-2 hours until completely set and cool. Cut out brookies with egg-shaped cookie cutter.
- Frost with premade (Or homemade!) frosting and add Easter sprinkles, if desired. If you prefer your brookies to not have frosting, you can keep them without frosting and that is ok, too!
