I love a good Game Day appetizer, and this Mexican Street Corn Fries recipe is the PERFECT easy, cheesy football snack! We love Mexican food at our house, and Mexican Street Corn is a favorite for the Big Game! Whether it’s football season or bracket season for basketball, you can never go wrong with lime, cilantro, cheese, and spices!
How to Make Mexican Street Corn Fries
I love this recipe because it’s so easy to layer all the ingredients, bake it, and you’re done!
Ingredients for Mexican Street Corn Fries
- Frozen French fries – You could also use sweet potato fries or waffle fries! Your favorite kind is just fine!
- Mexican Blend Shredded Cheese – Feel free to switch out the type of cheese you use, too.
- Lime
- Cilantro, coarsely chopped – Skip this if you don’t like it. I know not everyone does!
- Fire-roasted frozen corn –If you have fresh corn, you could use that, too. Then you could roast it yourself. I think frozen is easier, though! Ha!
- Butter
- Lime, juiced
- Chili powder
- Cumin
- Queso fresco crumbling cheese
- Sour cream
Instructions for Mexican Street Corn Cheesy Fries
First, preheat your oven and bake the frozen French fries on a baking sheet according to the package directions. The bake time and temp will differ depending on the brand and type of fries you choose. While the oven is preheating and the fries are cooking, microwave your corn according to package directions. In a medium mixing bowl, combine butter, seasoning, juice from 1/2 a lime, and corn.
Next, using the same baking sheet, sprinkle the shredded cheese on top of the baked fries and bake at 350 degrees until the cheese has melted.
Top with the roasted corn and crumble queso fresco on top. Sprinkle on cilantro. Put sour cream in a piping bag (or use a sandwich bag and cut the corner off) and drizzle on the top. Serve with slices of limes.
