I’m going to be completely honest with you, I could pretty much eat potato skins every day of my life. They are super flavorful, so easy to make and the family loves it (what else can a mom ask for?). However I don’t always have the time to make everything from scratch each day, I mean we are busy, we are doing a million things the last thing I want to do when dinner time comes is spend my whole night cooking and washing.

And that’s when freezer food comes in handy, however, I’m not talking about the store-bought freezer food, I’m talking about the homemade one. Because yes, you can whip up a meal, store it in your freezer and have a ready to eat dinner in no time in a couple of months from now. If that’s not awesome and the best thing on the planet, then I really don’t know what else can be.
And while soups, stews, and crockpot meals are a freezer food usual around here, I also like to have side dishes ready to be finished, That’s when these Freezer Friendly Potato Skins save the day. A tasty party appetizer recipe.

What Are The Best Potatoes For Potato Skins
I find that russets are the best variety. They have a nice starch so that you get that velvety smooth filling and the skins hold up really well in the baking and freezing process.
You can pretty much leave them ready to bake. Just cook and fill with everything (it takes no time!) and then just wrap in plastic wrap. It’s that easy, and it’s incredibly fast. You could do a week of side dishes in around 20 minutes, which means seven nights of side dishes in less than it takes takeout food to arrive.
For me, the secret to acing it is going big with the flavor, cream cheese, parmesan cheese, and scallions blend great together and result in a mind blowing good potato skin.
Freezer Friendly Potato Skins
Ingredients
- 4 Potatoes
- 6 Bacon strips
- 1½ Cup Mozzarella cheese, shredded
- 3 Tbsps cream cheese
- 2 Tbsps chopped scallions
- 3 Tbsps parmesan cheese
- 2 Tbsps butter
- Salt and pepper to taste
Directions
- In a skillet over medium heat fry the bacon until golden brown (about 3 -5 minutes) and chop it.
- With a fork make some holes on the potatoes, and place them in the microwave for 5 or 6 minutes.
- Carefully cut the potatoes in half, scoop some of the flesh out of the potato, and place it in a bowl.
- Stir in the cream cheese, 1 ½ Tbsp scallions, parmesan cheese, butter, salt, and pepper.
- Fill the potatoes with the mix, complete with the mozzarella cheese and the bacon.
- Wrap them with plastic wrap and store in the freezer until ready to use.
- When ready to serve, bake them in a preheated oven to 370F for 25 – 30 minutes.
- Remove from the oven, decorate with some scallions.
- Serve and enjoy.
