It doesn’t matter if you are preparing for the holiday baking craziness or just wanting to bake cookies for your kids after school. Go ahead and grab the ingredients and start baking! Once I start I remember how much I love it and I want to bake cookies for my friends, neighbors, and family!
For the past couple of years, I’ve been focused on creating and curating a holiday baking list full of foolproof cookie recipes that are delicious, crowd favorites, and overall total rockstars. Usually, I also like how the cookies hold up well for a couple of days since most of the time the baking day is not the same as the delivery one.
These peanut butter cup cookies have been on my list since the moment I started that list, so I’ve been making them and testing them and eating them and giving them for a very long time, needless to say, they are really tried and true.
They are full of peanut butter flavor (after all, they are named peanut butter cup cookies) and the chocolate coat is just amazing and helps the cookie last fresh for longer since it kind of seals in the moisture of the cookie.
They are soft and slightly chewy so they go great with a big mug of hot cocoa on a chilly day and they are mind-blowing good to dunk into a glass of cold milk. But best of all is that they look beautiful inside a cookie can or styled at a dessert table.
Peanut Butter Cup Cookies
These Peanut Butter Cup Cookies are the perfect addition to your holiday baking list! It is a tried and true recipe that has been on my list for years!
Ingredients
- ½ Cup peanut butter
- ½ Cup sugar
- 1 Large egg
- 1 Cup flour
- 1/4 Cup crushed peanuts
- 1/4 Cup melted chocolate
Instructions
- Preheat oven to 350 degrees.
- In a medium bowl combine the peanut butter, sugar, and egg.
- Mix with a spoon until nice and smooth.
- Stir in the crushed peanuts.
- Line a baking dish with parchment paper.
- Scoop 1/2 tablespoon of the batter onto the baking sheet.
- Bake for 10 minutes until brown around the edges but soft in the middle.
- Let cookies cool then dip them halfway into the melted chocolate.
- Half the cookie should be peanut butter and the other half coated with
- chocolate.
- Serve and enjoy.
