How to Make Pumpkin Bars with Brown Sugar Frosting
This is truly such an easy recipe to bake! I have included step-by-step directions with photos right below, but if you just want the recipe card, you can scroll down to the bottom of this post.
Pumpkin Bars Ingredients
- all-purpose flour
- pumpkin pie spice
- baking soda
- salted butter, melted
- light brown sugar
- 1 large egg
- vanilla extract
- pumpkin puree
Instructions for the Pumpkin Bars
First, preheat the oven to 350°F. Line an 8 by 8-inch baking pan with parchment paper. In medium bowl, whisk together the butter, brown sugar, egg, vanilla, and canned pumpkin. This will form the base for the Pumpkin Bars.
Next, add the flour, pumpkin pie spice, and baking soda, stirring until just combined.
Pour the batter into the prepared pan and bake for 25 minutes, or until a toothpick inserted into the center comes out clean. Be careful not to overbake. Cool completely.
Lastly, let the pumpkin bars cool completely before making the frosting. I let mine cool about 30 minutes and they were just fine to frost once I finished making the brown sugar icing.

- salted butter, at room temperature
- light brown sugar, packed
- ground cinnamon
- powdered sugar
- vanilla extract
- milk
Instructions for Brown Sugar Frosting
In a mixing bowl, beat the butter and brown sugar with a mixer on the high setting until light and fluffy. Add cinnamon and add powdered sugar a little at a time, beating on low after each addition until incorporated. Add the vanilla and milk and increase the mixing speed to speed to medium-high. Beat until fluffy and light. Spread frosting over the pumpkin bars and cut into squares.
Note: If the frosting becomes too runny, add more powdered sugar. If the frosting becomes too thick, add more milk, a tablespoon at a time.

- 1 teaspoon vanilla extract
- 1 cup pumpkin puree

- 1/4 cup light brown sugar, packed
- 1/2 teaspoon ground cinnamon
- 1 1/2 cups powdered sugar
- 1/2 teaspoon vanilla extract
- 1 tablespoon milk, plus more if needed
