Sheet pan recipes are one of my favorite ways to get dinner done without much effort and time in the kitchen. It’s something I can prep ahead of time and then throw it all together when I’m ready to bake it in the oven.
If you are into meal prepping, this may be something you want to try during the school year when your nights get super busy! Plus, I’ve found that some of my favorite sheet pan recipes are actually really healthy because they don’t have a lot of added cream sauces and such!

I think one of the things that makes this recipe burst with flavor is letting it marinate in the juice for an hour! It helps all of the flavors come together and makes it taste SO GOOD!
Sheet Pan Parmesan Chicken & Veggies Recipe
INGREDIENTS:
2 lbs. Chicken Breasts Cut in Pieces
2 Large Eggs
1 Tbsp. Lemon Juice
2 tsp Minced Garlic
1 tsp Pepper
1 tsp Salt
1 Tbsp. Parsley
1/2 Cup Parmesan Cheese
1/2 Cup Breadcrumbs
DIRECTIONS:
Line a Baking Sheet with Aluminum Foil and Spray with Cooking Spray.
In a Gallon Ziplog Bag combine Eggs, Lemon Juice, Minced Garlic, Parsley, Salt and Pepper.
Add Chicken to the bag and seal, Toss to coat chicken, then place in the Fridge to Marinate for 1 hour.
In a Small bowl combine Breadcrumbs and Parmesan, Pat Chicken into Dry Mixture until covered.
Place your Chicken, Carrots and Potatoes on a Baking Sheet.
Combine Melted Butter, Minced Garlic and Salt & Pepper and pour over Potatoes and Carrots.
Bake at 400 Degrees for 15 Minutes, Flip Chicken, then bake another 15 minutes.
