If you love easy cake mix recipes, add this one to your list. I love using cake mixes as the base to desserts. It is a quick and simple way to make a treat for your family, unexpected guests, or take to an event.
What Do I Need For Cake Mix Apple Muffins
Cake Mix – I used a spiced cake mix. You will find the spice cake mix adds tons of flavors and pairs really well with the apples in the recipe. I would imagine another flavor of cake mix would fall flat in terms of flavor.
Apples – Fresh peeled and diced apples really make this dessert go from a boxed flavor to homemade. Granny smith, Honeycrisp, Gala, are all great choices of apples. Feel free to use any baking apple.
Applesauce – The applesauce will act as the wet for the mixture and help bind the ingredients together!
Do You Peel The Apples
Peeling the apples is up to you. You can leave the peels on for added texture to the muffins, or do a quick peel if you prefer without. I have done it both ways and the muffins taste great either way.
How To Make
In a bowl add your dry cake mix, applesauce and apples together. Mix until well combined.
Spoon into lined cupcake pan, and bake as directed.
Once done, remove and allow to cool. Then serve and enjoy a simple and easy spice muffin! These spice muffins make a great fall muffin recipe to jumpstart your morning, or a mid-day treat.
Because of the apples in these muffins, I recommend storing them in the fridge. They will have a longer shelf life than leaving them on the counter at room temperature. The muffins can store for 3-5 days. After that you will want to toss out the leftovers.
In terms of freezing, you can freeze any muffins you don’t plan to eat right away. Store in a freezer bag or container for 3-4 months. Then thaw in the fridge overnight, or defrost in the microwave before serving.
