These Firecracker Grilled Shrimp are a spicy Summer meal! My favorite is to put the shrimp on top of Caesar salad. But, these would be excellent over rice or with roasted (or grilled!) veggies, too. I like that they cook quickly on the grill and while they’re marinating, I can be prepping other parts of the meal, too. If TOO spicy is not your thing, you can use half the amount of hot sauce and they’ll still turn amazing!
First, soak the bamboo grilling skewers in water for 30 minutes so they won’t burn on the grill. Preheat your grill to 450 degrees or high. Let it heat up for about 10-15 minutes before adding your Firecracker Grilled Shrimp.
Add shrimp, sriracha hot sauce, salt and pepper, olive oil, sugar and garlic in a large mixing bowl. Toss well. Marinate for at least 15 minutes to 1 hour.
Place the shrimp on the bamboo skewers, making sure the skewer goes through two places on the shrimp and the shrimp looks like it’s in a “C” shape. (This will prevent the Firecracker Grilled Shrimp from twisting around when you rotate the skewers while grilling!)
Grill for 2-3 minutes on each side. The shrimp should be opaque and no longer translucent.
Squeeze half a lime onto the shrimp. Garnish with remaining lime slices and chopped cilantro on top. Serve immediately over rice, in shrimp tacos, or with roasted veggies!

These Firecracker Grilled Shrimp are the perfect spicy recipe for Summer! The heat is from the sriracha, but you can add as much or as little as you like!

- 2 tablespoons Sriracha hot chili sauce (or less if you prefer not as much spice)
- 2 tablespoons olive oil
- ¼ teaspoon salt
- 1/2 teaspoon pepper
- 2 teaspoon sugar
- 1 tablespoon minced garlic
- 1 fresh lime, sliced (optional, for garnish)
- 1/4 cup of fresh cilantro, chopped (optional, for garnish)
